
Omega-3 Pancakes

- ½ cup old fashioned oats
- ¼ cup walnuts
- ½ cup whole wheat flour
- ¼ tsp sea salt
- 2 Tbsp ground flax seed
- 2 Tbsp wheat germ
- ½ tsp cinnamon
- 1 tsp baking powder
- ¼ tsp baking soda
- 2 omega-3 eggs
- 1 ½ Tbsp maple syrup
- ⅔ cup organic milk of choice
- 1 ½ Tbsp organic cold-pressed canola oil
- ¼ cup plain Greek Yogurt
- 1 cup organic Greek Yogurt
- ½ cup Chia Jam
- Grind oatmeal and walnuts in food processor to make a rustic flour. Place walnut-oat flour in a large mixing bowl.
- Add wheat flour, salt, flax, wheat germ, cinnamon, baking powder and baking soda.
- In another bowl, combine eggs, maple syrup, milk, canola oil and yogurt; whisk to combine.
- Add the liquid ingredients to the dry ingredients. Gently stir to combine. Let batter stand for 10 minutes before using.
- Heat a lightly greased griddle to 300°F. Ladle ¼ cup of the batter onto the griddle., flipping after 2-3 minutes when bubbles begin to form on top, until golden browned.
- Serve with Greek yogurt, Chia Jam and fresh fruit.
