
Orange & Cardamom Granola

- 4 cups old-fashioned rolled oats
- 1 ½ cups unsweetened coconut flakes
- ½ cup pepita seeds
- 1 ½ cups walnuts, chopped
- ½ cup sunflower seeds
- 2 tsp cinnamon
- ½ tsp ground cardamom
- 1 tsp orange zest
- ⅓ cup orange juice
- ½ cup maple syrup
- 2 tsp vanilla extract
- ½ tsp sea salt
- 3 Tbsp organic coconut oil, melted
- ½ cup flaxseed, ground
- 1 ½ cups dried fruit, roughly chopped (blueberries, cherries, apricots, goldenberries, goji berries or cranberries)
- Preheat oven to 300° Combine the first 13 ingredients in an extra large mixing bowl.
- Pour melted coconut oil over the oat mixture. Pour over the oat mixture. Stir well to coat evenly
- Pour oat mixture onto a baking sheet. Toast in the oven, stirring every 10 minutes until golden and fragrant, 50-60 minutes. Stir in ground flax seed the last 10 minutes.
- Remove from oven, and while still warm, stir in the dried fruit. After completely cooled, store an air-tight container
