Orange & Cardamom Granola

  • 4 cups old-fashioned rolled oats
  • 1 ½ cups unsweetened coconut flakes
  • ½ cup pepita seeds
  • 1 ½ cups walnuts, chopped
  • ½ cup sunflower seeds
  • 2 tsp cinnamon
  • ½ tsp ground cardamom
  • 1 tsp orange zest
  • ⅓ cup orange juice
  • ½ cup maple syrup
  • 2 tsp vanilla extract
  • ½ tsp sea salt
  • 3 Tbsp organic coconut oil, melted
  • ½ cup flaxseed, ground
  • 1 ½ cups dried fruit, roughly chopped (blueberries, cherries, apricots, goldenberries, goji berries or cranberries)
  1. Preheat oven to 300° Combine the first 13 ingredients in an extra large mixing bowl.
  2. Pour melted coconut oil over the oat mixture. Pour over the oat mixture.  Stir well to coat evenly
  3. Pour oat mixture onto a baking sheet. Toast in the oven, stirring every 10 minutes until golden and fragrant, 50-60 minutes.  Stir in ground flax seed the last 10 minutes.
  4. Remove from oven, and while still warm, stir in the dried fruit. After completely cooled, store an air-tight container
