
Salsa Fresca

- 1 lb ripe Roma tomatoes, roughly chopped
- ½ sweet onion, roughly chopped
- 1 large garlic clove, finely minced
- 1 small jalapeno, ribs and seeds removed, finely minced
- ½ tsp sea salt
- ¼ tsp black pepper
- 3 large scallions, diced
- ½ cup cilantro or Italian flat leaf parsley
- Place tomatoes, onions, garlic, jalapeno, salt and pepper into the food processor. Pulse 5 or 6 times.
- Add scallions and cilantro or parsley, pulse 2-3 more times.
- Serve immediately or refrigerate until ready to use.
