Salsa Fresca

  • 1 lb ripe Roma tomatoes, roughly chopped
  • ½ sweet onion, roughly chopped
  • 1 large garlic clove, finely minced
  • 1 small jalapeno, ribs and seeds removed, finely minced
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 3 large scallions, diced
  • ½ cup cilantro or Italian flat leaf parsley
  1. Place tomatoes, onions, garlic, jalapeno, salt and pepper into the food processor. Pulse 5 or 6 times.
  2. Add scallions and cilantro or parsley, pulse 2-3 more times.
  3. Serve immediately or refrigerate until ready to use.
