Turkey Breakfast Sausage

  • 1 lb lean ground turkey, dark meat or 93% lean white meat
  • crimini or shiitake mushrooms, chopped into pea-sized pieces
  • ¼ cup Italian flat leaf parsley, minced
  • 1 garlic clove, finely minced
  • 1 tsp turmeric
  • 1 tsp dried bouquet garni
  • 1 tsp fennel seeds
  • 1 tsp sweet paprika
  • ¼-½ tsp cayenne pepper, optional
  • ¼ tsp black pepper
  • ¾ tsp sea salt
  • 2 tsp balsamic vinegar
  • 1 tsp extra virgin olive oil
  • 2 tsp water
  1. Place all ingredients in a mixing bowl, except for olive oil and water.
  2. Using your hands, completely mix together and shape into 10 small flat patties. Wash your hands thoroughly.
  3. Preheat a skillet to medium. Drizzle the pan with olive oil quickly followed by the turkey patties. Brown for approximately 5-6 minutes. Turn over and brown for an additional 2-3 minutes.
  4. Add water, and partially cover skillet with a lid. Cook for 3 minutes. Remove the lid, cook 1 more minute. Serve.
