
Turkey Breakfast Sausage

- 1 lb lean ground turkey, dark meat or 93% lean white meat
- crimini or shiitake mushrooms, chopped into pea-sized pieces
- ¼ cup Italian flat leaf parsley, minced
- 1 garlic clove, finely minced
- 1 tsp turmeric
- 1 tsp dried bouquet garni
- 1 tsp fennel seeds
- 1 tsp sweet paprika
- ¼-½ tsp cayenne pepper, optional
- ¼ tsp black pepper
- ¾ tsp sea salt
- 2 tsp balsamic vinegar
- 1 tsp extra virgin olive oil
- 2 tsp water
- Place all ingredients in a mixing bowl, except for olive oil and water.
- Using your hands, completely mix together and shape into 10 small flat patties. Wash your hands thoroughly.
- Preheat a skillet to medium. Drizzle the pan with olive oil quickly followed by the turkey patties. Brown for approximately 5-6 minutes. Turn over and brown for an additional 2-3 minutes.
- Add water, and partially cover skillet with a lid. Cook for 3 minutes. Remove the lid, cook 1 more minute. Serve.
